Brie de Meaux is one of France's most famous and respected cheeses. With its thin white rind, creamy texture, and balanced aroma, it's one of the first names that comes to mind when you think of "soft cheeses." It's often referred to as the "queen of cheeses."

Brie de Meaux is a French cheese made from cow's milk, with a soft and creamy texture, white mold (flower rind), and aged for at least 4-8 weeks.

Like Parmigiano Reggiano, this cheese also has AOP (Appellation d'Origine Protégée) protection. This means its place of production, method, and even aging period are legally defined.

History and Origin: The history of Brie de Meaux dates back to the Middle Ages, approximately the 8th century. It takes its name from the town of Meaux, located east of Paris.

A notable anecdote from history:
At a cheese competition held during the 1815 Congress of Vienna, Brie de Meaux was chosen as the "King of Cheeses."
After this event, its fame spread beyond the borders of France, becoming an indispensable part of European aristocracy.

How is Brie de Meaux Made?
The production process is quite delicate and traditional.

1. Milk Selection;
●Raw or low-heat treated cow's milk is used.
●The aroma of the milk directly affects the character of the cheese.

2. Coagulation;
●Natural rennet is added.
●The curd forms slowly (it is not accelerated).

3. Molding;
●The curd is scooped into molds.
●This process ensures that the inner texture of the cheese remains creamy.

●4. Salting;
●Surface salting is done.

5. Molding and Ripening;
●Thanks to the Penicillium candidum culture, a white, velvety rind forms on the cheese.
●Ripening period: 4 to 8 weeks.

Taste and Texture Characteristics

The most distinctive feature of Brie de Meaux is its ripening from the outside in.

●As it ripens: Nutty, buttery, complex
●When overripe: Strong, sometimes sharp
●The inside is runny, the outer rind is thin and edible.

How to Consume Brie de Meaux?

It is served at room temperature, with baguette bread in the classic French style with light honey or fig jam, champagne, Chardonnay or light red wines.

It is recommended to cut it into triangular slices, not with a knife.
