What is Gouda?

It is a Dutch cheese aged in wax-coated wheels.

It takes its name from the city of Gouda in the Netherlands. Interestingly, cheese production takes place in rural areas, while Gouda has historically been a center of trade and markets.

The History of Gouda:

The origins of Gouda date back to the 12th century. Because farmers sold their cheese in the Gouda market during the Middle Ages, the cheese eventually became known by the city's name. For centuries, it spread throughout Europe thanks to the trading power of the Netherlands. Its durability made it a preferred choice for sea voyages, and today it is the Netherlands' largest cheese export item.

How is Gouda Made?
Gouda production involves a special stage that gives it its character.

1. Milk and Coagulation;
●Cow's milk is used.
●Renium is added to form a curd.

2. Whey Washing (Signature Step);
●A portion of the whey is removed.
●Hot water is added in its place.
👉 This process:
●Reduces acidity.
●Creates Gouda's sweetish character.

3. Molding and Pressing;
●The curd is placed in molds.
●Pressed to form smooth wheels.

4. Salting;
●It is kept in a brine bath.

5. Wax Coating;
●The cheeses are dried.
●They are coated with red, yellow, or black beeswax. (Beeswax allows the cheese to breathe)

6. Ripening;
●Can take from 4 weeks to several years.
●Types of Gouda According to Ripening;
●Jonge (Young): Soft, milky, slightly sweet
●Belegen (Medium): Balanced, nutty.
●Oud (Ripe): Firm, caramel-like.
●Extra Oud / Aged Gouda: Crystalline structure, intense umami, gourmet level.

●Aged Gouda: Firm, brittle, and contains salt crystals.
